Grilled Vegetable Feast

Create your list for the week and go shopping this morning. Just get today’s stuff if you’re buying or getting daily delivery.

Tonight you’ll have a Sunday meal to celebrate the early harvest. Marinated and grilled tofu made with ultra-firm tofu presents a densely textured, flavor loaded protein burst for tonight’s meal. Drizzle it with some tangy homemade barbecue sauce and you’ve created quite a centerpiece for a bunch of seasonal grilled vegetables seasoned with lemon and garlic.

I had you purchase ultra-firm tofu and freeze it last week.  Thaw tofu in the morning. Make some grilled marinated tofu during the day and Grill the vegetables and keep the kitchen and yourself a little cooler. Embellish in whatever way pleases you.
